  • 1 onion
  • 1 medium sized butternut
  • 2 cups vegetable stock
  • ¼ cup fresh or dried thyme
  • 2 garlic cloves
  • 1 packet of mushrooms
  • 1 tsp coconut oil
  • ½ tsp salt and black pepper
  • 1 tsp cayenne pepper
  • 1 tsp turmeric
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tin coconut milk
  • Fresh or dried chilli optional
  • 1 bag Happy Earth People chickpea pasta
